Methionine (2-amino-4-methylthiobutanoic acid, Met, M) is a colorless crystalline substance with a specific unpleasant odor.

Let's dissolve in water and partially soluble in ethanol. Insoluble in higher alcohols, diethyl ether, acetone, benzene.

Methionine contains an asymmetric carbon atom, respectively, there are two isomers - L-methionine and D-methionine.

Synthetic D, L-methionine is a racemic mixture.

L-methionine is an essential encoded amino acid that is not produced by animal organisms, which, accordingly, requires its supply from the outside.

Organisms are also able to metabolize D-methionine, converting it to the L-form.

In industry, racemic D, L-methionine is obtained from 3-methylthiopropionic aldehyde
